This naked cake, featuring fresh berries and a gentle vanilla mascarpone cream, is a fantastic project for children aged three and up. Ingredients for a Small Cake
This amount is perfect for a small springform pan (approx. 15 cm across) and makes about 4 servings.
For the batter:
- 100 g spelt flour
- 1 tsp baking powder
- 2 eggs
- 40 g soft butter
- 30 g maple syrup
- 2 tbsp milk
For the cream:
- 150 g mascarpone
- 100 g quark (or thick Greek yogurt)
- 1 tsp alcohol-free vanilla extract
- 1 tbsp maple syrup
For the decoration:
- 150 g mixed fresh berries (strawberries, raspberries, blueberries)
Preparation in Simple Steps
- Preheat the oven to 180 degrees Celsius (standard bake) and grease a small springform pan well.
- In a bowl, mix the soft butter and maple syrup until creamy. Stir in the eggs one by one until you have a smooth mixture.
- Combine the spelt flour and baking powder. Add this mixture to the batter alternately with the milk, mixing just until combined.
- Pour the batter into the pan and bake for about 20 to 25 minutes. Afterward, let the cake cool completely.
- For the cream, whisk together the mascarpone, quark, vanilla, and maple syrup until smooth.
- Slice the cooled cake horizontally into two layers. Spread half of the cream on the bottom layer, place the top layer on it, and spread the remaining cream on top.
- Wash the berries, cut large strawberries into smaller pieces, and decorate the cake colorfully. Chill briefly in the fridge before serving.
Variations & Everyday Tips
Instead of berries, soft peach chunks or banana slices pair beautifully with the vanilla cream. Let your child wash the fruit and arrange it on the cake however they like. This builds pride and encourages creativity.
The covered cake stays fresh in the refrigerator for about two days. Freezing the assembled cake is not recommended due to the mascarpone. However, you can easily freeze the unfrosted cake layers in advance.
Parents can elevate their own slices with a sprinkle of chopped, toasted nuts or fresh mint leaves.
