Contains: Gluten, Dairy, Egg

This airy Easter yeast wreath brings festive cheer to the family table and relies entirely on ripe bananas for its gentle sweetness. The soft texture is ideal for little hands to grasp and chew. It makes sharing a meal during the family Easter brunch a joyful experience for everyone.

Ingredients

  • 250 g wheat flour (all-purpose, organic if possible)
  • 100 ml lukewarm whole milk
  • 1/2 cube fresh yeast (approx. 21 g) or 1 packet active dry yeast
  • 1 very ripe banana (approx. 100 g mashed)
  • 30 g soft butter
  • 1 egg yolk (for brushing)
  • 1 tbsp milk (for brushing)

Preparation

  1. Pour the lukewarm milk into a bowl and dissolve the yeast in it.
  2. Mash the ripe banana with a fork until it forms a smooth puree.
  3. Combine the flour, soft butter, mashed banana, and the yeast-milk mixture in a large bowl.
  4. Knead everything for about 5 to 10 minutes until a smooth dough forms.
  5. Cover the dough and let it rest in a warm place for about 60 minutes, until it has noticeably increased in volume.
  6. Divide the dough into three equal pieces and shape them into long rolls.
  7. Braid the three rolls loosely and join the ends to form a wreath.
  8. Place the wreath on a baking sheet lined with parchment paper and let it rest for another 20 minutes.
  9. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  10. Whisk the egg yolk with a tablespoon of milk and brush the mixture over the wreath.
  11. Bake the yeast wreath for about 20 to 25 minutes until golden brown.
  12. Allow the wreath to cool completely and always check the internal temperature before serving it to your child.

Variations & Tips

  • Fruity Twist: Mix a handful of finely chopped, unsulfured raisins or cranberries into the dough.
  • For the Parents: Serve the finished wreath with a little honey or fruit spread for the adults at the table.
  • Storage: The wreath stays fresh for one to two days in a bread box. You can also slice it and freeze it, thawing individual slices as needed.
  • Adjusting Texture: For children who are still practicing their chewing skills, you can tear the pastry into small, bite-sized pieces.

Allergy & Safety

This recipe contains wheat (gluten), milk, and egg (common allergens). Always introduce new ingredients one at a time and in small amounts. Please note that honey is only safe for children from 12 months of age. If you choose to add nuts, only use them finely ground due to the choking hazard. If you have any uncertainties about introducing new foods or potential allergies, it is always best to consult your pediatrician.

Nutritional Information

The banana provides natural energy and valuable potassium for an active day. At the same time, the flour offers satisfying carbohydrates that keep little tummies full. By skipping refined sugar, everyone can enjoy a balanced and delicious holiday treat.
