Airy Strawberry Quark Casserole with Fine Semolina

Introduction

This sweet summer casserole beautifully combines fresh strawberries, low-fat quark, and fine semolina. The fluffy texture is easy to chew and is often loved by children from three years of age. At the same time, the dish provides valuable protein and fresh vitamins for little explorers. It is a wonderful way to serve a warm yet light meal on sunny days.

Ingredients

  • 250 g strawberries (ideally organic)
  • 250 g low-fat quark (or plain Greek yogurt)
  • 50 g fine semolina (wheat)
  • 2 eggs (medium size)
  • 1 tablespoon canola oil or soft butter for the baking dish
  • 1 teaspoon vanilla extract (alcohol-free)
  • 1 tablespoon maple syrup or agave nectar (optional, for a mild sweetness)

Preparation

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit). Grease a small baking dish with the canola oil or soft butter.
  2. Wash the strawberries thoroughly and remove the green tops. Cut the fruit into bite-sized pieces.
  3. Separate the eggs. Beat the egg whites in a clean bowl with a hand mixer until stiff peaks form.
  4. In a second bowl, mix the low-fat quark, egg yolks, semolina, vanilla extract, and maple syrup until you have a smooth batter.
  5. Gently fold the beaten egg whites into the quark mixture. This creates a wonderfully airy and light base.
  6. Fold in the strawberry pieces gently and pour the finished mixture into the prepared baking dish.
  7. Bake the casserole for about 25 to 30 minutes. It is ready when the surface has turned a golden brown color.
  8. Let the casserole cool down well after baking. Always check the temperature before serving so your child does not burn their mouth.

Variations & Tips

  • Fruity Variety: Depending on the season, you can easily replace the strawberries with raspberries, blueberries, or small apple pieces.
  • Storage: The casserole keeps well in the fridge for up to two days when covered. You can also freeze it in small portions and reheat it gently in the oven when needed.
  • Adjusting Texture: For children who are not yet fond of fruit chunks, you can simply puree the strawberries finely before folding them in.
  • For the Whole Family: Adults can enhance their portion on the plate with a little powdered sugar or toasted almond slices.
