Autumn Plum and Banana Fritters

These soft plum and banana fritters bring the cozy flavors of autumn to the table. They are wonderfully easy for little hands to grasp and make a fantastic finger food. Ingredients

  • 1 ripe banana (organic preferred)
  • 2 ripe plums
  • 40 g quick oats
  • 1 tbsp canola oil (for the batter)
  • 1 pinch Ceylon cinnamon
  • A little canola oil for pan-frying

Preparation

  1. Wash and pit the plums, then cut them into very fine cubes.
  2. Mash the ripe banana in a bowl with a fork until it forms a smooth puree.
  3. Mix the quick oats, the tablespoon of canola oil, the diced plums, and a pinch of Ceylon cinnamon into the mashed banana. Let the batter rest for about 10 minutes until it thickens and holds together.
  4. Heat a little canola oil in a non-stick pan over medium heat. Drop small spoonfuls of the batter into the pan and flatten them gently.
  5. Cook the fritters for about 3 to 4 minutes on each side until they are golden brown and soft all the way through.
  6. Place the finished fritters on a paper towel to drain and let them cool completely. Always check the temperature on the inside before your child takes the first bite.

Variations and Tips

  • Different fruit: Instead of plums, finely grated apples or soft pear chunks work beautifully in this batter.
  • Storage: The fritters can be stored in an airtight container in the fridge for up to two days. They also freeze very well and can be gently thawed in the toaster or oven when needed.
  • Adjusting texture: For babies who are just starting solid foods and are not yet ready for finger food, you can blend all the ingredients into a smooth puree. You can then offer the mixture as a soft spoonable meal.
  • For the whole family: Parents and older siblings can enjoy these fritters as a delicious breakfast topped with a little maple syrup, roasted nuts, or plain yogurt.
