Introduction
This autumnal twist on the beloved pasta classic brings bright colors to the plate. Puréed Hokkaido pumpkin creates a wonderfully creamy sauce that many children love. At the same time, the dish provides valuable energy and important nutrients for active autumn days.
Ingredients
- 250 g whole wheat pasta (like macaroni or fusilli)
- 300 g Hokkaido pumpkin (organic quality, washed and diced)
- 150 ml milk (or a plant based alternative)
- 100 g grated cheese (like mild cheddar or gouda)
- 2 tablespoons breadcrumbs (for the topping)
- 1 tablespoon butter or canola oil
- A pinch of nutmeg
- A little salt and pepper (use very sparingly)
Preparation
- Preheat the oven to 200 degrees Celsius, using top and bottom heat.
- Cook the pasta according to the package instructions until soft.
- Boil the diced pumpkin in a pot with a little water for about 15 minutes until tender. Drain the water and purée the pumpkin together with the milk until you get a smooth, creamy consistency.
- Stir half of the grated cheese, the butter, and the spices into the warm pumpkin purée. Fold in the cooked pasta and transfer everything into a baking dish.
- Mix the remaining cheese with the breadcrumbs and sprinkle over the casserole. Bake in the oven for about 10 minutes until the topping is golden brown and crispy.
- Let the casserole cool down well before serving. Always test the temperature before your child takes the first bite.
Variations and Tips
- Swap the vegetables: Instead of pumpkin, you can also use sweet potatoes or carrots. This provides a similar color and a pleasant, natural sweetness.
