
Autumnal Mushroom Ragout with Soft Bread Dumplings
Tender mushrooms in a mild sauce meet fluffy, easy-to-chew bread dumplings. This autumnal dish is wonderful for children from twelve months on, as the soft texture makes chewing effortless. It brings cozy flavors to the family table and provides a varied vegetarian meal.
Ingredients for the Family (approx. 2 to 3 portions)
For the bread dumplings:
- 200 g stale bread rolls (about 3 to 4 pieces)
- 150 ml cow's milk (whole milk)
- 1 egg (medium)
- 1 tbsp fresh parsley (finely chopped)
- 1 pinch of nutmeg
For the mushroom ragout:
- 250 g fresh button mushrooms (cultivated, brown or white)
- 1 small onion
- 1 tbsp rapeseed oil or olive oil
- 100 ml low-sodium vegetable broth
- 100 ml heavy cream (or oat cream)
- 1 tbsp fresh parsley (chopped)
Preparation
- Cut the bread rolls into small cubes and place them in a bowl. Warm the milk slightly, pour it over the bread cubes, and let the mixture soak for about 10 minutes.
- Add the egg, parsley, and a pinch of nutmeg to the soaked bread. Knead everything with your hands to form a smooth dough.
- Form small, bite-sized dumplings with damp hands. Let the dumplings simmer in a pot of gently simmering water for about 15 minutes, until they float to the surface.
- Meanwhile, clean the mushrooms and cut them into very thin slices. Peel and finely dice the onion.
- Heat the oil in a pan. Gently sauté the onions and mushrooms until they become soft.
- Deglaze with the vegetable broth and cream. Let the sauce simmer gently for about 10 minutes until a creamy consistency forms, then stir in the parsley.
- Let the dish cool down well before serving and check the temperature before feeding.
Variations and Tips
- Veggie addition: Feel free to grate half a carrot and cook it in the sauce for extra color.
- Storage: The finished dish keeps in the fridge for two days. The cooked or uncooked dumplings freeze beautifully in individual portions.
- For the parents: The adult portion can be seasoned at the table with salt, pepper, and a splash of white wine.
- Sweet ending: A dollop of plain yogurt with a little honey makes a great dessert, as honey is safe to eat after the first birthday.

Mushrooms can sometimes be heavy on little tummies. Start with a small portion and always cook the mushrooms thoroughly. Only use cultivated mushrooms from the store for children, as wild mushrooms carry a dangerous risk of confusion with poisonous varieties. Cow's milk is now also fine as a drink with meals in moderation.
