
Baked Asparagus and Ham Rolls with Cheese Sauce for Kids

Ingredients
For two to three portions, you will need the following ingredients:
- 500 g white asparagus (organic preferred)
- 1 tsp butter (for the baking dish)
- 1 pinch sugar (for the cooking water)
- 150 g mild cooked ham (sliced)
- 15 g butter (for the sauce)
- 15 g wheat flour
- 150 ml whole milk
- 50 ml of the asparagus cooking water
- 50 g grated mild cheese (such as Gouda or a mild cheddar)
- 1 pinch nutmeg
- 1 pinch mild herbs (such as parsley or chives)
Preparation
- Preheat the oven to 200 degrees Celsius (top and bottom heat) and grease a small baking dish with a little butter.
- Peel the asparagus thoroughly and generously cut off the woody ends.
- Boil the asparagus spears in a pot of water with a pinch of sugar for about 10 to 12 minutes until tender but firm.
- Drain the asparagus, saving 50 ml of the cooking water for the sauce.
- Wrap two to three asparagus spears in a slice of cooked ham and place them side by side in the baking dish.
- For the sauce, melt the butter in a small saucepan, stir in the flour, and let it cook briefly.
- Slowly whisk in the milk and the asparagus water until you have a smooth, creamy mixture.
- Bring the sauce to a brief boil, season with nutmeg and herbs, and pour it evenly over the asparagus rolls.
- Sprinkle the grated cheese on top and bake in the oven for about 15 minutes until golden brown.
- Let the dish cool down well before serving, and always check the temperature before your child takes the first bite.
Variations & Tips
- Swap vegetables: You can easily replace the white asparagus with green asparagus or slightly pre-cooked carrot sticks.
- Storage: Leftovers keep in the fridge for about two days. Freezing is not recommended for this dish, as the asparagus can become watery.
