Baking a Crispy Gingerbread House: A Family Recipe

Introduction

Baking and decorating a gingerbread house together is a wonderful experience for the whole family. Ingredients

For the gingerbread dough (makes 1 house):

  • 250 g honey
  • 100 g butter (organic preferred)
  • 100 g brown sugar
  • 500 g wheat or spelt flour
  • 1 tbsp mild gingerbread spice (e.g., with cinnamon and a little clove)
  • 1 tbsp cocoa powder
  • 1 tsp baking powder
  • 1 egg

For the icing and decoration:

  • 250 g powdered sugar
  • 1 egg white or 2 to 3 tbsp lemon juice
  • Colorful chocolate candies, shredded coconut, or almonds

Preparation

  1. Gently heat the honey, butter, and sugar in a pot until everything has melted. Remove from heat and let the mixture cool down slightly.
  2. Mix the flour, gingerbread spice, cocoa, and baking powder in a large bowl. Add the lukewarm honey mixture and the egg.
  3. Knead everything into a smooth, firm dough. Wrap the dough in plastic wrap and let it rest in the fridge for at least two hours.
  4. Preheat the oven to 180 degrees Celsius (standard bake). Roll out the dough to about five millimeters thick and cut out house walls and roof pieces using a knife.
  5. Bake the dough pieces on a baking sheet for 12 to 15 minutes until firm. Let them cool completely afterward so they do not break during assembly.
  6. For the icing, mix the powdered sugar with a little lemon juice or egg white to create a very thick, sticky paste. Glue the house together with it, decorate as desired, and check that the temperature and texture are comfortable for your child before eating.

Variations & Tips

  • Alternative decoration: Instead of chocolate candies, dried fruits, pumpkin seeds, or unsalted pretzels work wonderfully for the roof.
  • Storage: The finished house will keep in a dry place for several weeks. The raw dough can easily be frozen and used later.
  • For younger siblings: Cut out small, soft gingerbread figures and bake them for a shorter time so they are easier to chew.
  • Family tip: Use leftover dough to make little stars, which pair perfectly with the parents' afternoon coffee.

This recipe contains gluten (flour), egg, and dairy (butter). If your child has allergies, you can easily use plant-based alternatives like margarine or an egg substitute.
