Baking a Light Strawberry Swiss Roll with Kids

Baking and Enjoying Together

Baking together is a wonderful experience for your child from age three onwards. Making this light strawberry Swiss roll supports fine motor skills as they help stir and spread the batter. The fresh strawberries also provide valuable vitamins for your daily routine. It is a recipe that brings joy to the kitchen and allows little hands to get involved.

Ingredients

For a small roll (approx. 3 to 4 portions) you will need:

  • 3 eggs (organic if possible)
  • 50 g sugar (or a mild alternative like coconut sugar)
  • 60 g spelt flour
  • 1 tsp baking powder
  • 150 g fresh strawberries
  • 200 g heavy cream
  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 180 degrees Celsius and line a small baking tray with parchment paper.
  2. Beat the eggs and sugar in a bowl using a hand mixer until the mixture becomes pale and voluminous. This takes about five minutes.
  3. Mix the flour and baking powder, sift over the egg mixture, and gently fold it in with a spatula.
  4. Spread the batter evenly onto the parchment paper and bake for ten to twelve minutes until golden.
  5. Immediately turn the hot sponge out onto a clean, slightly damp kitchen towel, peel off the parchment paper, and roll the cake up with the towel. Let it cool completely.
  6. Meanwhile, wash, hull, and dice the strawberries. Whip the heavy cream with the vanilla extract until stiff.
  7. Carefully unroll the cooled cake, spread the whipped cream over it, and scatter the strawberries on top.
  8. Roll the cake back up tightly and chill in the refrigerator for one hour before serving. Please check that the temperature is comfortable for your child before eating.

Variations & Tips

  • Other Fruits: Instead of strawberries, raspberries, soft peach chunks, or banana slices work beautifully for the filling.
  • Storage: The Swiss roll keeps well in the refrigerator for up to two days when covered. Freezing is not recommended because the cream can become watery upon thawing.
  • For the Whole Family: Adults can elevate their portion with a dusting of powdered sugar or some freshly grated dark chocolate.
  • Adjusting Texture: For children who prefer smooth fillings, you can puree the strawberries first and fold them gently into the cream.
