Step by Step to the Finished Treat

  1. Preheat the oven to 180 degrees Celsius (approx. 350 degrees Fahrenheit). Line a muffin tin with paper liners or grease it well.
  2. Wash, peel, and finely grate the carrot and zucchini. Gently squeeze the grated zucchini to remove excess water, keeping the batter from getting too runny.
  3. In a bowl, mix the flour, baking powder, salt, and herbs together.
  4. In a separate large bowl, whisk the eggs, oil, and milk well. Quickly stir the dry ingredients into the wet mixture until a smooth batter forms.
  5. Gently fold the grated vegetables and cheese into the batter.
  6. Distribute the batter evenly among the muffin cups. Bake the muffins for about 20 to 25 minutes until they are golden brown.
  7. Remove the muffins from the oven and let them cool completely. Always check the temperature briefly before eating to ensure they are safe to enjoy.
