Baking Small Pretzel Chestnuts from Yeast Dough

Shaping dough promotes fine motor skills and brings great joy to many children. These soft pretzel chestnuts made from homemade yeast dough are wonderful for a cozy afternoon of baking. They provide valuable energy for active explorers and taste delicious to the whole family.

Ingredients

  • 250 g spelt flour (type 630 or all-purpose, organic if possible)
  • 125 ml lukewarm water
  • 1 tsp active dry yeast
  • 1 tbsp canola oil
  • 1 pinch of salt
  • For the baking soda bath: 500 ml water, 2 tbsp food-grade baking soda
  • Optional topping: a little sesame seeds or coarse salt (only for the adults)

Preparation

  1. Mix the flour, active dry yeast, water, canola oil, and a pinch of salt in a bowl. Knead everything until a smooth and pliable dough forms.
  2. Cover the dough and let it rest in a warm place for about 45 minutes, until it has noticeably increased in volume.
  3. Divide the dough into small portions and form them into little balls together with your child, making them look like chestnuts.
  4. Preheat the oven to 200 degrees Celsius (top and bottom heat) and line a baking sheet with parchment paper.
  5. For the baking soda bath, bring the water to a boil in a pot, remove from the heat, and carefully stir in the baking soda (it will foam slightly).
  6. Dip the dough balls individually into the hot baking soda bath for about 30 seconds, lift them out with a slotted spoon, and place them on the baking sheet.
  7. Bake the pretzel chestnuts in the oven for 12 to 15 minutes, until they have a beautiful brown color.
  8. Let them cool completely before eating and check the temperature inside to ensure no one burns their mouth.

Variations & Tips

  • Hidden veggies: You can knead a tablespoon of finely grated carrot into the dough.
  • Storage: The chestnuts stay fresh in an airtight container in the fridge for about two days. They also freeze exceptionally well and can be quickly reheated in the oven.
  • For the family: Adults often enjoy sprinkling their portion with coarse sea salt or cheese before baking.
  • Texture adjustment: For younger siblings, you can press the balls slightly flatter to make them even softer and easier to chew.
