Ingredients
- 250 g wheat or spelt flour (type 550, organic if possible)
- 100 ml lukewarm milk
- 20 g fresh yeast (about half a cube)
- 40 g soft butter
- 30 g raw cane sugar or agave syrup
- 1 pinch of salt
- Raisins and flaked almonds for decoration
- A little extra milk for brushing
Preparation
- Pour the lukewarm milk into a bowl and dissolve the yeast in it.
- Add the flour, soft butter, sugar, and a small pinch of salt.
- Knead everything for about five to ten minutes until a smooth, pliable dough forms.
- Cover the dough and let it rest in a warm place for about 45 minutes, until it has clearly doubled in size.
- Divide the dough into two to three equal pieces and shape them into little men.
- Place the dough figures on a baking tray lined with parchment paper and decorate them with raisins and flaked almonds.
- Brush lightly with milk and bake in a preheated oven at 180 degrees Celsius with top and bottom heat for 15 minutes until golden brown.
- Let them cool completely before eating and check the temperature inside.
Variations and Tips
- Instead of raisins, you can use dried cranberries or small apple pieces.
- The dough can easily be prepared the night before and stored in the fridge overnight.
- Fully baked dough men can be frozen without any issues and quickly reheated in the oven when needed.
- For the whole family: Sprinkle some of the figures with a little cinnamon and sugar before baking.
