Beetroot, Potato, and Sweet Apple Puree for Starting Solids

The earthy flavor of beetroot pairs beautifully with the natural sweetness of apples. This vibrant puree is not only visually appealing on the spoon but also supports iron absorption thanks to the vitamin C in the apple. When blended to a very smooth consistency, it is a wonderful option for the early stages of starting solids. Parents can keep portions very small at first, as two to six spoonfuls are often plenty for those initial tastes. Over time, you can gently increase the amount to a full portion of about 100 to 200 grams.

Ingredients

For about two to three portions, you will need the following ingredients:

  • 100 g beetroot (fresh, raw, weighed after peeling, organic if possible)
  • 100 g potatoes (starchy or all-purpose for a creamy texture)
  • 50 g sweet apple (such as mild varieties like Gala or Fuji)
  • 1 tbsp canola oil (refined, which is highly recommended for baby food)
  • 3 to 4 tbsp water (either the reserved cooking water or fresh boiled water)

Preparation

  1. Thoroughly peel the beetroot, potatoes, and apple, then cut them into fine, even cubes.
  2. Place the prepared vegetables and apple in a small pot and cover them with just enough water so they are slightly submerged.
  3. Bring the water to a boil, then reduce the heat and let the ingredients simmer gently for about 15 minutes until very tender.
  4. Drain the remaining cooking water after boiling, making sure to reserve some of the liquid in a cup.
  5. Add the canola oil and three to four tablespoons of the reserved cooking water to the soft vegetables in the pot.
  6. Blend everything with a powerful immersion blender until you reach a very fine, smooth, and completely lump-free consistency.
  7. Transfer the finished puree to a small bowl, allow it to cool to body temperature, and always test the temperature on your wrist or lip before feeding.

Variations & Tips

  • Fridge Storage: The freshly cooked puree can be stored in a tightly sealed container in the refrigerator for up to two days.
  • Convenient Freezing: This recipe is excellent for batch cooking, and you can easily freeze it in clean ice cube trays. This way, you always have small, perfectly sized portions ready to go.
  • Adapting the Texture: For older children who are already accustomed to solids, you can simply mash the vegetables lightly with a fork instead of blending them smoothly.
  • Flexible Vegetable Swaps: If you want to mix things up, this recipe also tastes wonderful when you replace the beetroot with mild carrots, pumpkin, or sweet parsnips.
  • Tip for the Family: Season any leftover puree not intended for your child with a pinch of salt, pepper, and a dollop of sour cream to create a delicious side dish for the adults.

Always introduce new foods one at a time and in small amounts so you can easily observe your child for any potential reactions over a few days. This recipe is completely free from the 14 major EU allergens and is very gentle on the tummy. Completely avoid adding salt, sugar, and honey during the entire first year to protect your child's developing kidneys and prevent risks.
