Chocolate Zupfkuchen Muffins for Little Hands

A light quark batter in a muffin tin, topped with small pieces of torn chocolate dough. Baking and tearing the dough together brings great joy to many children and playfully supports their fine motor skills. At the same time, the quark provides valuable calcium for their growth.

Ingredients

For about 6 muffins (2 to 3 child portions):

  • 75 g wheat or spelt flour
  • 1 tbsp unsweetened cocoa powder
  • 30 g soft butter
  • 20 g coconut sugar (or raw cane sugar)
  • 1 tbsp milk
  • 125 g low fat quark (organic preferred)
  • 1 egg
  • 1 tbsp maple syrup
  • 1 tsp vanilla extract

Preparation

  1. Preheat the oven to 180 degrees Celsius on top heat and bottom heat and line a muffin tin with six paper cases.
  2. Knead the flour, cocoa powder, butter, sugar and milk in a bowl until a smooth dough forms.
  3. Divide about two thirds of the chocolate dough among the six cases and press down to form a flat base.
  4. For the filling, whisk together the quark, egg, maple syrup and vanilla extract until smooth.
  5. Distribute the quark mixture evenly over the chocolate bases in the cases.
  6. Tear the remaining chocolate dough into small pieces and scatter them over the light quark mixture.
  7. Bake the muffins for about 20 minutes until the quark mixture is set.
  8. Let the muffins cool completely and always check the temperature before eating.

Variations and Tips

  • Berry surprise: Press a few raspberries or blueberries into the quark mixture before adding the torn chocolate dough on top.
  • Storage: The muffins keep in the fridge for about two days. They also freeze wonderfully and can be thawed individually as needed.
  • For the whole family: Simply double the quantities for a full muffin tin to treat the adults too.
  • Adjusting texture: For children who prefer softer textures, you can skip the chocolate base and only scatter the torn dough on top.
