Classic Baked Apples with Almond-Raisin Filling and Vanilla Sauce

This warming winter dessert brings a cozy atmosphere to the cold season and is a favorite among many children aged three and older. The soft apples and the delicate almond-raisin filling offer an exciting combination of textures, gently stimulating sensory development. At the same time, the nuts and fruit provide valuable energy for active winter days.

Ingredients

  • 3 medium apples (organic preferred, tart varieties like Granny Smith work well)
  • 50 g ground almonds
  • 30 g raisins (unsulfured)
  • 1 tsp cinnamon (Ceylon cinnamon preferred)
  • 2 tbsp soft butter
  • 150 ml milk (or plant-based alternative)
  • 1 tsp vanilla extract or the seeds of half a vanilla bean
  • 1 tbsp cornstarch
  • 1 tbsp maple syrup

Preparation

  1. Preheat your oven to 180 degrees Celsius (350 degrees Fahrenheit). Wash the apples thoroughly and generously core them.
  2. Mix the ground almonds, raisins, cinnamon, and soft butter in a small bowl. Pack this mixture firmly into the hollowed-out apples.
  3. Place the stuffed apples in a small baking dish and bake for about 25 to 30 minutes. The apples are ready when they are soft and the skin begins to split slightly.
  4. For the sauce, whisk the cornstarch with two tablespoons of the cold milk. Bring the remaining milk, vanilla, and maple syrup to a boil in a small saucepan.
  5. Stir the starch mixture into the boiling milk and let it simmer for one minute until a smooth, creamy sauce forms.
  6. Allow the baked apples and sauce to cool down well before serving. Always test the temperature carefully before your child takes the first bite.

Variations & Tips

  • Adjust the filling: Instead of raisins, finely chopped soft dates or dried apricots work wonderfully for the filling.
  • Storage: Leftover baked apples keep well covered in the refrigerator for up to two days. Freezing is not recommended, as the apples become very mushy.
  • For the whole family: Adults can enhance their portions with toasted sliced almonds or a pinch of cardamom.
  • Texture for younger siblings: For children over one year old, you can mash the baked apple flesh finely without the skin and mix it with a little sauce.
