A Light Treat for the Whole Family

This beloved sheet cake classic brings generations together. The soft yeast dough and mild vanilla cream offer a wonderful taste experience for children from three years of age. Teenagers can easily try their hand at preparing the fluffy pudding cream and caramelizing the almond crust on their own.

Ingredients for a Small Springform Pan (approx. 18 cm, 3 to 4 portions)

For the yeast dough:

  • 150 g spelt flour (organic if possible)
  • 70 ml lukewarm whole milk
  • 10 g fresh yeast
  • 20 g soft butter
  • 1 tbsp mild honey

For the almond crust:

  • 30 g butter
  • 1 tbsp honey
  • 50 g sliced almonds (finely chopped for younger children)

For the vanilla cream:

  • 250 ml whole milk
  • 15 g unsweetened vanilla pudding powder
  • 1 tbsp honey or maple syrup
  • 100 g cold heavy cream

Preparation

  1. Dissolve the yeast in the lukewarm milk and knead it together with the flour, butter, and honey into a smooth dough. Cover the dough and let it rest in a warm place for about 45 minutes until it has visibly expanded.
  2. Preheat the oven to 170 degrees Celsius (top and bottom heat) and grease a small springform pan. Press the dough into the pan and let it rest for another 15 minutes.
  3. For the crust, melt the butter and honey in a small pot, stir in the almonds, and spread the mixture over the dough. Bake the cake for about 20 to 25 minutes until golden brown, then let it cool completely.
  4. Meanwhile, mix the pudding powder with a little cold milk until smooth. Bring the remaining milk and honey to a boil, stir in the powder mixture, and let it thicken briefly before setting the pudding aside to cool.
  5. Whip the cold heavy cream until stiff and gently fold it into the completely cooled vanilla pudding until a smooth, creamy texture is formed.
  6. Slice the cooled cake horizontally, spread the vanilla cream on the bottom half, and place the almond crust on top. Check the temperature of the filling before serving, as the cake tastes best slightly chilled.

Variations and Tips

  • Fruity touch: Scatter a few fresh raspberries or thin strawberry slices over the vanilla cream before adding the top layer.
  • Storage: The cake keeps well in the refrigerator, covered, for about two days. Freezing the assembled cake is not recommended, as the cream can become watery.
  • Adjusting texture: For younger children (three years and up), you can finely chop the sliced almonds before caramelizing them to make the crust easier to chew.
  • Family tip: If you are baking the cake for a larger gathering, simply double the ingredients to fit a standard 26 centimeter springform pan.
