Ingredients
- 250 g stale bread rolls (or white bread, organic if possible)
- 250 ml milk (whole milk or a plant-based alternative)
- 300 g fresh sweet cherries (pitted)
- 2 eggs
- 30 g soft butter
- 1 tbsp maple syrup or mild sweetener of choice
- 1 pinch ground vanilla
For the vanilla sauce:
- 250 ml milk
- 1 tsp cornstarch
- 1 pinch ground vanilla
- 1 tsp maple syrup
Preparation
- Cut the stale bread into small cubes and place them in a large bowl.
- Slightly warm the milk, pour it over the bread cubes, and let everything soak for about 15 minutes.
- Preheat the oven to 180 degrees Celsius (top and bottom heat) and grease a small baking dish.
- Separate the eggs, beat the egg whites until stiff, and stir the egg yolks with the soft butter, maple syrup, and vanilla until creamy.
- Fold the egg yolk mixture into the soaked bread, then gently mix in the pitted cherries and finally the beaten egg whites.
- Pour the mixture into the baking dish and bake for about 40 minutes until golden brown.
- For the sauce, whisk the milk with cornstarch, vanilla, and maple syrup in a small pot until lump-free, then bring to a brief boil while stirring until a smooth, creamy consistency forms.
- Let the cherry bread pudding cool down after baking and always check the temperature before serving your child.
Variations & Tips
- Fruity Variation: If cherries are not in season, this dish tastes wonderful with diced apples or pears.
- Storage: Leftovers keep in the fridge for about two days and taste great cold. Freezing is possible but slightly changes the texture of the bread.
- For the whole family: Adults often enjoy sprinkling some sliced almonds over the casserole before baking for a little extra crunch.
- Adjusting texture: For children who are not yet fond of chunks, you can blend the bread and milk mixture more finely before baking.
Allergy & Safety Information
- This recipe contains gluten (bread), eggs, and dairy (EU allergens).
- Always introduce new foods one at a time and in small amounts to carefully observe any potential reactions.
