Classic Chicken Fricassee with Soft Rice and Vegetables

Introduction

This mild chicken fricassee is a wonderful comfort meal for the family table. It provides plenty of energy for active toddlers and features soft textures that make independent spoon-feeding much easier. Parents often appreciate how simply this dish adapts to the tastes of the whole family.

Ingredients

  • 150 g chicken breast fillet (organic if possible)
  • 1 large carrot (approx. 100 g)
  • 50 g frozen peas
  • 1 tbsp canola oil or butter
  • 1 tbsp wheat flour (all-purpose)
  • 150 ml unsalted chicken or vegetable broth
  • 50 ml whole milk or heavy cream
  • 1 splash of lemon juice
  • 1 pinch of mild paprika
  • some fresh parsley
  • 60 g short-grain rice (for a sticky consistency)

Preparation

  1. Cook the rice in plenty of water according to the package instructions until it is very soft and slightly sticky.
  2. Wash the chicken breast, pat it dry, and cut it into very small, bite-sized cubes.
  3. Peel the carrot and also cut it into fine, small cubes.
  4. Heat the canola oil or butter in a pot over medium heat and gently sauté the meat until it is completely cooked through.
  5. Dust the flour over the meat, let it cook briefly, and deglaze everything with the broth and milk.
  6. Add the diced carrots and peas, and let the sauce simmer over medium heat for about 10 to 15 minutes until the vegetables are very soft.
  7. Season the fricassee mildly with a splash of lemon juice, paprika, and finely chopped parsley.
  8. Let everything cool down well before serving and always test the temperature before your child takes the first bite.

Variations & Tips

  • Swap the vegetables: Instead of peas and carrots, fine broccoli florets or small pieces of asparagus also fit perfectly into the mild sauce.
  • Storage: Leftovers keep well in a sealed container in the fridge for up to two days. The fricassee (without the rice) also freezes beautifully for up to three months.
  • Adjusting the texture: For children who are just getting used to solid foods, you can easily mash the sauce, meat, and vegetables slightly with a fork.
  • For the parents: Set aside the portion for your child and season the rest in the pot generously with salt, white pepper, and a little Worcestershire sauce.

This recipe contains wheat (gluten) and dairy. Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions. Ensure that the chicken is cooked thoroughly.

While honey is allowed at this age, it poses a risk of infant botulism for babies under 12 months. Nuts carry a choking hazard and are only safe when finely ground. If you have any uncertainties about introducing solid foods or transitioning to family meals, please consult your pediatrician.
