Classic Easter Meatloaf: A Festive Family Meal

Ingredients

  • 300 g mixed minced meat (organic recommended)
  • 2 small eggs (hard-boiled)
  • 1 small egg (raw, for the mixture)
  • 30 g breadcrumbs
  • 1 small onion
  • 1 tbsp canola oil
  • 1 tsp mild mustard
  • 1 pinch of salt
  • 1 pinch of sweet paprika
  • 1 tsp fresh parsley (chopped)

Preparation

  1. Preheat the oven to 180 degrees Celsius (conventional bake).
  2. Finely dice the onion and sauté in a pan with the canola oil until translucent.
  3. In a large bowl, thoroughly knead together the minced meat, the raw egg, breadcrumbs, cooled onions, mustard, salt, paprika, and parsley. Mix until you have a smooth, easily shapeable dough.
  4. Form the meat mixture into a flat loaf and place the peeled, hard-boiled eggs in the center in a row. Carefully fold the meat around the eggs and seal it well to create a compact loaf.
  5. Place the meatloaf on a baking tray lined with parchment paper and bake for about 35 to 40 minutes. The meat must be completely cooked through.
  6. Remove the meatloaf from the oven and let it rest briefly before slicing. Always check the temperature before serving to ensure your child does not burn their mouth.

Variations & Tips

  • Hidden Veggies: You can mix finely grated carrots or zucchini into the meat mixture. This makes the dish even juicier and adds an extra portion of vegetables to the plate.
  • Storage: Leftovers keep well in the fridge, covered, for up to two days. The fully baked meatloaf can also be frozen in slices and thawed quickly when needed.
  • Texture Adjustment: For children who are still practicing chewing larger pieces, simply cut the meat into very small, bite-sized cubes.
  • Family Tip: Adults can season their own portions at the table with some freshly ground pepper or a rich gravy. This way, the whole family can enjoy the meal together.
