Classic Lentil Stew with Fully Cooked Vienna Sausages

This classic lentil stew warms you from the inside and provides valuable energy for you and your baby through the legumes. The sausages are heated thoroughly at the end, allowing you to enjoy them safely during pregnancy. It is a wonderful dish for days when you are craving hearty, comforting food.

Ingredients

  • 150 g brown lentils
  • 1 onion
  • 2 carrots
  • 1 small piece of celery
  • 1 tbsp canola oil
  • 700 ml vegetable broth
  • 2 Vienna sausages (or frankfurters)
  • A pinch of salt, pepper, and a splash of mild vinegar

Preparation

  1. Peel the onion, carrots, and celery, and cut them into small cubes.
  2. Heat the oil in a large pot and gently sauté the vegetables.
  3. Add the lentils and pour in the vegetable broth.
  4. Let the stew simmer gently over medium heat for about 40 minutes until the lentils are tender.
  5. Slice the sausages, add them to the pot, and let them heat through completely for another 10 minutes.
  6. Season the stew gently with a pinch of salt, pepper, and a little mild vinegar.

Good to know

Stews are great for making in larger batches and reheating the next day. The lentil stew often tastes even better once the flavors have had time to meld.

In the third trimester, the growing belly often presses on the stomach, which can cause heartburn. Try eating several smaller portions throughout the day instead of one large meal. You can easily skip the vinegar if you are sensitive to acidic foods.
