Ingredients

  • 4 organic eggs (medium size)
  • 400 g firm potatoes (regional varieties are ideal)
  • 300 g fresh spinach (or thawed frozen spinach)
  • 30 g unsalted butter
  • 30 g all purpose flour
  • 250 ml whole milk (for necessary energy)
  • 150 ml low sodium vegetable broth (without artificial additives)
  • 2 tbsp mild mustard (a child friendly, unsweetened variety)
  • 1 pinch of freshly grated nutmeg
  • 1 tsp canola oil (rich in valuable fatty acids)

Preparation

  1. Wash and peel the potatoes thoroughly, then cut them into bite sized pieces. Boil them in a pot of lightly salted water for about 15 to 20 minutes until soft. Use a fork to check if the potatoes have reached the desired soft consistency.
  2. Place the eggs in boiling water and cook them for about 8 to 9 minutes. It is always best to cook eggs fully through for young children. Afterward, rinse them under cold running water, peel, and carefully cut them in half lengthwise.
  3. For the sauce, let the butter melt in a small pot over medium heat. Quickly stir in the flour and sauté briefly without letting it brown. Pour in the milk and vegetable broth, and let it simmer while stirring constantly with a whisk for about 5 minutes until a smooth, creamy texture forms.
  4. Remove the pot from the heat and stir in the mild mustard evenly. Season the sauce with a fine pinch of nutmeg. Carefully place the egg halves into the warm sauce and let them rest briefly.
  5. In a pan, briefly sauté the washed and drained spinach with a little canola oil over medium heat. Wait until the leaves wilt slightly and take on a soft texture.
  6. Arrange all components lovingly on plates and let everything cool down well before feeding. Always test the temperature to ensure your child eats safely without burning their mouth.

Variations and Tips

  • Vegetable swap: Instead of spinach, steamed carrots, fine peas, or soft broccoli also pair beautifully with the mild mustard sauce. This allows you to reinvent the dish time and time again.
  • Storage: Leftovers stay fresh in a covered container in the fridge for up to two days. The sauce freezes wonderfully in portions, but it is best to prepare the eggs and spinach fresh.
  • Adjusting texture: For younger siblings, mash the potatoes with a fork and chop the spinach very finely. The sauce further softens the potatoes, which makes chewing much easier.
  • For the whole family: Adults can add a little spicy mustard, freshly ground black pepper, or a pinch of salt at the table. This way, everyone enjoys the meal without having to cook separately.
