Classic Semolina Slices with Tender Apple Compote

This familiar family kitchen classic is a wonderful meal for little explorers from their first birthday. The soft semolina slices are easy to grasp, while the tender apple compote adds a natural sweetness. At the same time, this dish provides valuable energy for an active day at the family table.

Ingredients

For the semolina slices:

  • 250 ml whole milk (cow's milk or a plant-based alternative)
  • 50 g soft wheat semolina
  • 1 tsp butter or canola oil
  • 1 pinch Ceylon cinnamon

For the apple compote:

  • 2 mild apples (such as Gala or Jonagold, ideally organic)
  • 3 tbsp water
  • A splash of lemon juice

Preparation

  1. Peel, core, and dice the apples into small cubes. Place them in a small pot along with the water and lemon juice.
  2. Simmer the fruit gently over medium heat for about 10 minutes until soft. Then mash lightly with a fork until a chunky compote forms.
  3. For the slices, bring the milk, butter, and cinnamon to a boil in a second pot. Gradually whisk in the semolina, stirring constantly.
  4. Reduce the heat and let the semolina porridge thicken for about 2 to 3 minutes until a smooth, firm mixture forms.
  5. Spread the hot porridge onto a flat plate or small baking sheet so it is about 1 to 2 centimeters thick. Allow the mixture to cool completely.
  6. Cut the set semolina into handy diamonds or rectangles. Always check the temperature before serving to ensure your child does not burn their mouth.

Variations and Tips

  • Fruity variety: Swap the apples for pears or peaches. In summer, mashed berries also pair beautifully with the slices.
  • Storage: The semolina slices will keep covered in the fridge for about 2 days. They also freeze well and can be thawed individually as needed.
  • For the whole family: Adults can enhance their portion with a little honey, toasted almond slivers, or a pinch of sugar.
  • Adjusting the texture: For children who are still practicing, you can puree the compote more finely. The slices can be cut into smaller bite-sized pieces.
