
Classic Sweet Braided Yeast Bread with Sliced Almonds
Introduction

Ingredients
- 250 g wheat flour (all-purpose, organic preferred)
- 10 g fresh yeast (or 1 teaspoon active dry yeast)
- 100 ml lukewarm milk
- 30 g soft butter
- 30 g sugar
- 1 pinch of salt
- 1 egg (organic)
- 2 tablespoons sliced almonds (for decoration)
- 1 tablespoon pearl sugar (optional)
- A little extra milk for brushing
Preparation
- Pour the lukewarm milk into a large bowl and dissolve the fresh yeast in it completely by stirring.
- Add the wheat flour, sugar, soft butter, a pinch of salt, and the egg to the yeast milk.
- Knead everything with your hands or a stand mixer into a smooth, supple dough until it pulls away easily from the sides of the bowl and is no longer sticky.
- Cover the dough with a clean kitchen towel and let it rest in a warm, draft-free place for about 60 minutes until it has visibly doubled in size.
- Briefly knead the risen dough again on a lightly floured surface and divide it into three equal pieces.
- Roll the three pieces of dough into even strands and braid them loosely together on the table.
- Carefully place the finished braid on a baking sheet lined with parchment paper, cover it, and let it rest for another 20 minutes.
- In the meantime, preheat the oven to 180 degrees Celsius (conventional heat).
- Brush the braid with a little extra milk and sprinkle generously with sliced almonds and optionally with pearl sugar.
- Bake in the preheated oven for about 20 to 25 minutes until golden brown and the kitchen smells delicious.
- Allow the yeast bread to cool completely on a wire rack before slicing and serving to ensure a safe temperature for your child.

- Fruity variation: Knead a handful of washed raisins, small apple chunks, or dried apricots into the dough.
- Storage: The bread stays wonderfully fresh in a breadbox for two to three days. It also freezes beautifully when sliced and can be quickly reheated in the toaster as needed.
