Colorful Bell Pepper and Quark Muffins to Mix Together

Baking with kids12+m 40 min 4 VeggieMedium
Contains: Gluten, Dairy, Egg

These savory muffins, featuring sweet bell pepper pieces and mild quark, make a wonderful snack for little explorers aged twelve months and up. When your child joins the family table, this recipe offers a great way to introduce a varied mixed diet. Simply mixing the ingredients together turns baking into an ideal activity where your child can actively help. At the same time, the colorful vegetables provide valuable vitamins for their busy days. Parents love this recipe because it is quick to make and fits perfectly into the family meal plan.

Ingredients

For about 6 to 8 muffins (which makes 2 to 3 snack portions for the family), you will need:

  • 100 g spelt flour
  • 1 tsp baking powder
  • 2 eggs (medium)
  • 120 g quark (or plain whole milk yogurt)
  • 30 ml canola oil or mild olive oil
  • 1 small red bell pepper (approx. 100 g)
  • 30 g grated cheese (e.g., mild Gouda or cheddar)
  • 1 pinch of salt (use very sparingly)
  • 1 tsp mild herbs (e.g., parsley or chives)

Feel free to choose organic quality, especially for the vegetables and eggs.

Preparation

  1. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and lightly grease a muffin tin or line it with paper liners.
  2. Wash the bell pepper thoroughly under running water, remove the core, and cut it into very fine, toddler-friendly cubes.
  3. In a large mixing bowl, whisk together the eggs, quark, and oil until a smooth, creamy mixture forms.
  4. Quickly stir in the spelt flour and baking powder to avoid any lumps.
  5. Gently fold in the prepared diced bell pepper, grated cheese, and mild herbs using a spatula.
  6. Distribute the batter evenly among the muffin cups, filling them about two-thirds full.
  7. Bake in the preheated oven for about 20 to 25 minutes until golden brown.
  8. Remove the muffins from the oven, let them cool completely on a wire rack, and always check the temperature inside before eating.

Variations & Tips

  • Swap the veggies: Instead of bell peppers, finely grated carrots, zucchini, or small corn kernels work beautifully in this batter. This is a great way to keep bringing new colors to the plate.
  • Storage: Stored in an airtight container in the fridge, the muffins stay fresh for about two to three days. They also freeze wonderfully and can be reheated individually in the toaster or oven when needed.
  • For the whole family: Adults can enhance their muffins right at the table with a savory herb dip, a pinch of chili, or a little extra salt and pepper.
  • Adjusting the texture: For children who are still getting used to chunks, the bell pepper can be lightly steamed beforehand or even finely pureed.

Allergy and Safety Information

This recipe contains eggs, dairy (quark, cheese), and gluten (spelt flour), which are among the main allergens. Always introduce new foods one at a time and in small amounts to easily observe any potential reactions. While honey is allowed after the first birthday, this savory recipe naturally requires no sweeteners. Ensure that small vegetable pieces are baked soft to allow for safe chewing. Nuts or seeds are not used here, but due to the choking hazard, they would only be suitable if finely ground. If you have any uncertainties about toddler nutrition or introducing new foods, it is always best to speak with your pediatrician.

Nutrition Note

The colorful bell pepper pieces supply plenty of vitamin C, which excellently supports the absorption of iron from other plant-based foods. The quark and eggs add valuable proteins and calcium to the plate, which is especially important for bone growth during this active phase. Thanks to the spelt flour, your child stays full longer and receives important fiber for balanced digestion. This turns a simple snack into a wholesome mini-meal.
