
Colorful Chicken Skewers with Mild Tomato Rice for the Family
Eating from a skewer brings a lot of joy to many children and awakens their curiosity about new vegetables. These colorful chicken skewers with fruity tomato rice are ideal for shared family meals from three years onwards. Tender meat and mild vegetables are easy to chew, while the rice offers a pleasantly soft and filling side dish.
Ingredients
For 2 to 3 portions you will need:
- 250 g chicken breast fillet (organic quality recommended)
- 1 small zucchini
- 1 mild, red bell pepper
- 2 tbsp mild olive oil or canola oil
- 1 tsp sweet paprika powder
- 1 pinch of salt and mild herbs (like oregano or thyme)
- 100 g long grain or basmati rice
- 200 ml strained tomatoes (passata)
- 150 ml mild vegetable broth
- Wooden skewers
Preparation
- Rinse the chicken breast fillet under running water, pat dry, and cut into bite-sized cubes of about two centimeters.
- Wash, core, and cut the zucchini and bell pepper into pieces similar in size to the meat.
- Thread the meat and vegetables alternately onto the wooden skewers.
- In a small bowl, mix the oil with the paprika powder and herbs, then brush the skewers with the marinade.
- For the tomato rice, place the rice, strained tomatoes, and vegetable broth in a pot and bring to a boil.
- Let the rice simmer gently over low heat for about 15 to 20 minutes, until the liquid is absorbed and the rice is soft.
- While the rice cooks, fry the skewers in a non-stick pan over medium heat for about 10 to 12 minutes, turning occasionally until the chicken is fully cooked through.
- Arrange the skewers and rice on plates and let them cool down well before serving. Please check the temperature carefully before your child begins to eat.
Variations and Tips
- The vegetables can easily be adapted to your child's preferences. You can also try mild mushrooms, cherry tomatoes, or small pieces of eggplant on the skewers.
- For adults, you can add more seasoning at the table or serve a spicy yogurt sauce on the side.
- Leftovers can be stored in an airtight container in the refrigerator for up to two days. The tomato rice also freezes well and can be gently reheated when needed.
- If your child finds it difficult to bite directly from the stick, simply slide the pieces off onto their plate before eating.

This recipe is naturally dairy-free and egg-free. Please check the ingredient list of your vegetable broth, as it may contain celery (an EU14 allergen). It is always best to introduce new ingredients one at a time and in small amounts to easily observe any potential reactions.
Even though this recipe is for older children, a general rule applies: Pure honey is unsuitable in the first year of life due to the risk of infant botulism.
