This colorful gnocchi skillet is a wonderful family meal for children from three years of age.   • 150 g cherry tomatoes
  • 125 g mini mozzarella balls (cow's milk)
  • 1 tbsp canola oil or mild olive oil
  • 1 tsp dried Italian herbs (like basil or oregano)
  • 50 ml tomato passata or a splash of water
  • A tiny pinch of salt (use very sparingly for young children)

Preparation

  1. Wash the zucchini and cherry tomatoes thoroughly under running water. Cut the zucchini into small, bite-sized cubes and cut the cherry tomatoes in half. The smaller the pieces, the easier they are for little hands to pierce with a fork.
  2. Heat the oil in a large skillet over medium heat. Pan-fry the gnocchi for about 5 minutes until they are lightly golden brown. This creates a pleasant texture that is slightly crispy on the outside and wonderfully soft on the inside.
  3. Add the diced zucchini and let everything cook gently for another 3 to 4 minutes. Stir occasionally so nothing sticks to the bottom of the pan and the flavors combine well.
  4. Stir in the halved tomatoes, the tomato passata, and the herbs. Let the skillet simmer on low heat for about 5 minutes until the vegetables are soft and a slightly creamy sauce forms. The tomatoes will break down slightly and release a natural sweetness.
  5. Distribute the drained mini mozzarella balls over the dish and cover the pan. Wait about 2 to 3 minutes until the cheese melts softly and becomes beautifully stringy.
  6. Remove the pan from the heat and let the dish cool down sufficiently. Always check the temperature before serving, as the inside of the tomatoes often remains very hot. A quick temperature test by tasting a small bite yourself provides peace of mind.

Variations and Tips

  • Vegetable variety: You can easily replace the zucchini with grated carrots, fine broccoli florets, or soft bell pepper pieces. This allows you to wonderfully adapt the meal to seasonal offerings and your family's current preferences.
  • Storage: Leftovers keep well in the refrigerator for up to two days when covered and can be gently reheated over low heat. Freezing is not recommended for this recipe, as the gnocchi and cheese change their texture significantly when thawed.
  • For the parents: Adults can easily season their own portions directly at the table with fresh black pepper, a little chili, fresh garlic, or extra salt. This way, the whole family enjoys the meal without the child's portion being too overpowering.
  • Adjusting texture: For children who are still getting used to vegetable pieces, you can lightly puree the vegetable sauce with an immersion blender before mixing in the gnocchi. This creates a smooth, creamy sauce where the vegetables are wonderfully hidden.
