These colorful mini pizzas are a wonderful experience for the whole family. Ingredients

For the dough:

  • 250 g spelt flour (light or all-purpose)
  • 1 tsp active dry yeast
  • 150 ml lukewarm water
  • 2 tbsp olive oil
  • 1 small pinch of salt

For the sauce:

  • 150 ml tomato puree (passata)
  • 1 tsp dried oregano

For the toppings:

  • 1 small red bell pepper
  • 3 tbsp sweet corn (canned, unsweetened)
  • 50 g grated mild cheese (like Gouda or Mozzarella)
  • Optional: a few small broccoli florets

Preparation

  1. Mix the flour, yeast, water, olive oil, and a small pinch of salt in a bowl. Knead everything until a smooth, pliable dough forms.
  2. Cover the dough and let it rest in a warm place for about 45 minutes. It often doubles in size during this time.
  3. Preheat the oven to 200 degrees Celsius (400 degrees Fahrenheit). Cut the vegetables into very small, bite-sized pieces.
  4. Divide the dough into small portions and roll them out into flat mini pizzas. Place them on a baking sheet lined with parchment paper.
  5. Spread a little tomato sauce on each mini pizza and let everyone add their favorite vegetables and cheese.
  6. Bake in the preheated oven for about 12 to 15 minutes until golden brown.
  7. Let the mini pizzas cool down well and always check the temperature before your child takes a bite.

Variations & Tips

  • Swap the veggies: Zucchini, mushrooms, or mild cherry tomatoes are excellent alternatives for the toppings.
  • Storage: Baked pizzas keep well in an airtight container in the fridge for about two days. They also freeze beautifully and can be reheated in the oven when needed.
  • Texture adjustments: For a softer crust, leave the dough a bit thicker and slightly reduce the baking time.
  • For parents: Adults can top their pizzas with fresh arugula, a drizzle of garlic oil, or a stronger cheese after baking.
