Colorful Noodle Soup with Beef Meatballs and Root Vegetables

Introduction

Ingredients

For 2 to 3 portions you will need the following fresh ingredients:

  • 200 g minced beef (organic if possible for great flavor)
  • 100 g carrots
  • 50 g parsnips or parsley root
  • 750 ml mild vegetable broth (low sodium)
  • 100 g small fun shaped noodles or classic soup pasta
  • 1 tbsp finely chopped fresh parsley
  • 1 pinch of salt and pepper for mild seasoning
  • 1 tsp canola oil for sautéing

Preparation

  1. Mix the minced beef with the chopped parsley, a small pinch of salt, and a little pepper in a large bowl.
  2. With slightly moistened hands, form the meat mixture into small, bite-sized meatballs.
  3. Wash, peel, and cut the carrots and parsnips into very fine cubes so they cook quickly.
  4. Gently heat the canola oil in a sufficiently large pot and briefly sauté the diced vegetables.
  5. Pour the mild vegetable broth over the vegetables and bring the entire liquid to a rolling boil.
  6. Carefully drop the prepared beef meatballs into the boiling broth and immediately reduce the heat.
  7. Let everything simmer gently in the covered pot for about 10 to 12 minutes.
  8. Add the noodles and cook for another 8 to 10 minutes until the pasta is soft and the meat is fully cooked through.
  9. Allow the finished soup to cool down well and carefully check the temperature before your child takes the first spoonful.

Variations and Tips

You can easily adapt the vegetables to suit your family's taste. Sweet potatoes, fine peas, or small broccoli florets also fit perfectly into this warming soup. If your child prefers specific types of vegetables, you can wonderfully use those as a base. A little grated mild cheese as a topping is also loved by many children.

Stored in a tightly sealed container, the dish will keep fresh in the fridge for about two days. You can also freeze the soup in small portions without any issues and warm it up gently on the stove when needed. For older children and adults, the soup can be customized right at the table with fresh herbs, a pinch of chili, or a splash of soy sauce for a more savory flavor.

Allergy and Safety Information

This recipe contains gluten from the noodles and potentially celery if it is included in the vegetable broth used. Always introduce new ingredients one at a time and in small amounts to easily observe any potential reactions.
