Colorful Oven-Roasted Vegetables with Chicken and Herb Quark
Introduction
This colorful oven dish is wonderful for children from three years of age, bringing together a variety of soft textures and mild flavors. The combination of vibrant vegetables and protein-rich chicken provides great energy for active days. It requires very little cleanup and is perfect for sharing at the family table.
Ingredients
For 2 to 3 portions you will need:
- 300 g potatoes (waxy variety)
- 2 carrots (organic recommended)
- 1 small zucchini
- 250 g chicken breast fillet (organic recommended)
- 3 tbsp olive oil
- 1 tsp sweet paprika powder
- 1 pinch of salt and pepper (fine in moderation for kids over 3)
- 250 g quark or plain whole-milk yogurt
- 2 tbsp milk or sparkling water (for creaminess)
- 2 tbsp mixed fresh herbs (for example parsley, chives, dill)
Preparation
- Preheat the oven to 200 degrees Celsius (top and bottom heat).
- Peel the potatoes and carrots, wash the zucchini, and cut everything into bite-sized pieces.
- Rinse the chicken breast under cold water, pat dry, and cut into small cubes.
- Spread the vegetables and meat on a baking sheet. Drizzle with olive oil, sprinkle with paprika powder, and toss everything well.
- Bake in the oven for about 25 minutes, until the vegetables are tender and the chicken is completely cooked through.
- Meanwhile, stir the quark with the milk until smooth and fold in the finely chopped herbs.
- Remove the finished tray from the oven and let it cool briefly. Always check the temperature before serving so your child does not burn their mouth.
Variations & Tips
- Swap the veggies: Sweet potatoes, pumpkin, or bell peppers fit perfectly and add new colors to the plate.
- Storage: Leftovers can be kept in an airtight container in the fridge for up to two days. Freezing is possible, but potatoes and zucchini may become quite mushy after thawing.
- Adjusting the texture: For younger siblings, you can simply mash the soft vegetables and meat with a fork.
- For the parents: Adults can easily spice up their own portions at the table with chili flakes, garlic, or extra salt.
