Ingredients

For about 2 to 3 portions, you will need the following ingredients:

  • 250 ml whole milk
  • 100 g grated mild cheese (such as Gouda or mild cheddar)
  • A pinch of nutmeg
  • A pinch of sweet paprika
  • A little canola oil for the baking dish

Preparation

  1. Preheat the oven to 180 degrees Celsius (standard bake) and grease a small baking dish with a little canola oil.
  2. Cut the broccoli into very small, bite-sized florets and cook in boiling water for about five minutes until soft. Drain well afterwards.
  3. Melt the butter in a small saucepan over medium heat. Stir in the flour and cook briefly.
  4. Slowly pour in the milk while stirring constantly with a whisk until you have a smooth and creamy sauce. Let the sauce simmer gently for about two minutes.
  5. Remove the pot from the heat, then stir in half of the grated cheese, the nutmeg, and the paprika.
  6. Spread the potato noodles and broccoli in the baking dish and pour the cheese sauce evenly over the top.
  7. Sprinkle the remaining cheese over the casserole and bake in the preheated oven for about 15 to 20 minutes until golden brown.
  8. Let the casserole cool down well before serving. Please always test the temperature before your child takes the first bite.

Variations and Practical Tips

  • Swap the vegetables: Broccoli can easily be replaced with cauliflower, peas, or diced carrots.
  • For the whole family: Parents can season their own portions at the table with salt, pepper, or fresh herbs.
  • Storage: Leftovers can be kept covered in the refrigerator for up to two days. The casserole can also be frozen in portions and gently reheated when needed.
  • Adjusting texture: For children who prefer softer textures, you can cook the broccoli a little longer before baking.
