- 150 g spelt flour
- 75 g cold butter (cut into small pieces)
- 1 small egg
- 1 pinch of salt

- 1 small spring onion (mild green parts only)
- 2 eggs
- 100 ml heavy cream (or oat cream)
- 50 g mild Gouda cheese (grated)
- 1 pinch of nutmeg
- 1 tsp finely chopped parsley
Preparation
- Quickly knead the flour, cold butter, egg, and a pinch of salt together until a smooth dough forms.
- Shape the dough into a ball, wrap it in a beeswax wrap, and place it in the refrigerator for 30 minutes.
- Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit) and lightly grease a small quiche pan (about 20 cm in diameter).
- Roll out the dough, place it into the pan, and gently press it up the sides to create an edge.
- Wash the spring onion greens thoroughly and slice them into very fine rings.
- Whisk the eggs together with the cream, grated Gouda, nutmeg, and parsley until you have a smooth mixture.
- Spread the frozen peas and spring onions over the crust and pour the egg and cream mixture evenly on top.
- Bake the quiche in the preheated oven for about 25 to 30 minutes, until the filling is set and the top is golden brown.
- Let the quiche cool down well before serving, and always test the temperature before your child takes the first bite.
