Colorful Spring Quiche with Young Spinach and Mild Cheese

This colorful spring quiche with young spinach and mild cheese is a wonderful dish for the family table and perfect for little explorers from twelve months onwards. It provides valuable energy for active days and brings fresh colors to the plate. The soft texture makes eating easy, while the mild flavor delights both young and old.

Ingredients

For the crust:

  • 150 g spelt flour
  • 75 g soft butter
  • 30 ml water

For the filling:

  • 150 g fresh baby spinach
  • 2 eggs
  • 100 ml whole milk
  • 50 g mild grated cheese (such as young Gouda or mild cheddar)
  • 1 pinch of nutmeg
  • some mild herbs (such as parsley)

Preparation

  1. Knead the spelt flour, soft butter, and water together to form a smooth dough.
  2. Press the dough into a small, greased baking dish or quiche pan (about 20 cm in diameter) and pull up a small edge.
  3. Wash the baby spinach thoroughly and chop it into fine pieces.
  4. In a bowl, whisk the eggs with the milk, grated cheese, nutmeg, and parsley.
  5. Spread the chopped spinach evenly over the dough base and pour the egg and cheese mixture over it.
  6. Bake the quiche in a preheated oven at 180 degrees Celsius (standard top and bottom heat) for about 25 to 30 minutes, until the filling is set and slightly golden brown.
  7. Let the quiche cool down well after baking and always check the temperature before serving it to your child.

Variations and Tips

  • Swap the veggies: Instead of spinach, you can also use finely grated carrots or softly steamed zucchini.
  • Storage: The quiche keeps well in the fridge for up to two days when covered and freezes beautifully in small portions.
  • For the whole family: Adults can season their portion at the table with a pinch of salt, pepper, or a little chili flakes.
  • Adjusting texture: For children who are still practicing their pincer grasp, you can cut the quiche into small, manageable cubes.

This recipe contains wheat, dairy products, and eggs. Always introduce new ingredients individually and in small amounts to carefully observe any potential reactions.

Even though honey is allowed from twelve months, this recipe works perfectly without any added sweetness. Nuts are not used here, but for other recipes, remember to always grind them finely to prevent choking hazards.
