Colorful Vegetable Bolognese with Whole Wheat Spaghetti
An Invitation to Family Meals
This colorful vegetable Bolognese combines the classic flavor many children love with an extra portion of vitamins. Finely grated carrots and zucchini blend seamlessly into the sauce, making the meal highly nutritious. It is a wonderful way to enrich your family menu in a relaxed and tasty manner.
Ingredients
- 200 g whole wheat spaghetti
- 250 g minced meat (beef and pork mix, organic recommended)
- 1 medium carrot (approx. 100 g)
- 1 small zucchini (approx. 150 g)
- 1 small onion
- 1 clove of garlic
- 400 g strained tomatoes (unseasoned)
- 2 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- A pinch of salt and pepper (fine in moderation for children over three years)
Preparation
- Peel the onion and garlic, then chop them into very fine cubes. Wash and trim the carrot and zucchini, then grate them finely.
- Heat the olive oil in a large pan or pot over medium heat. Sauté the onions and garlic until they are soft and translucent.
- Add the minced meat and fry until it is completely cooked through and crumbly. Stir in the finely grated vegetables and cook for another five minutes.
- Pour in the strained tomatoes, oregano, basil, salt, and pepper. Bring the sauce to a boil, then let it simmer gently on low heat for about 15 minutes until it becomes thick and smooth.
- Meanwhile, cook the whole wheat spaghetti according to the package instructions in lightly salted water, then drain well.
- Let the sauce cool down sufficiently before serving. Always check the temperature carefully before offering the meal to your child.
Variations and Tips
- Swap the veggies: You can easily replace the zucchini with finely grated parsnips or celery root. This creates a mild and slightly different flavor profile.
- Storage: The sauce keeps well in an airtight container in the fridge for up to two days. It is also highly freezable and lasts for about three months in the freezer.
- Texture adjustments: For children who are still getting used to mixed textures, you can lightly puree the finished sauce before serving.
- Family tip: Adults can spice up their own portions at the table with fresh chili flakes, extra garlic, or a generous sprinkle of parmesan cheese.
