Colorful Vegetable Dumplings in Gentle Broth

Especially in the first few weeks of pregnancy, your appetite can be quite unpredictable and nausea is common. A warm, gentle broth with mild vegetable dumplings warms you from the inside and provides energy in a soothing way. This dish is quick to prepare and can be easily adapted to how you are feeling right now.

Ingredients

• 1 package vegetarian Maultaschen or large vegetable dumplings (refrigerated, approx. 300 g)
• 750 ml mild vegetable broth
• 2 carrots
• 1 small zucchini
• A few sprigs of fresh parsley
• Optional: a splash of lemon juice

Preparation

1. Wash and peel the carrots, then cut them into thin slices.
2. Wash the zucchini and dice it into bite-sized pieces.
3. Bring the vegetable broth to a boil in a pot and add the carrots.
4. Let the broth simmer gently for about five minutes.
5. Add the zucchini and the dumplings to the pot.
6. Let everything steep over medium heat for another ten minutes, until the vegetables are tender and the dumplings are heated through.
7. Sprinkle the soup with freshly chopped parsley before serving.

Good to know

You can vary the types of vegetables entirely to your taste. If you feel like having a more filling meal, a handful of whole-wheat noodles also goes well in the broth.

If things are feeling difficult right now

If you are experiencing strong nausea in early pregnancy, you can leave out the vegetables and just eat the dumplings in the clear broth. It often helps to let the soup cool down a bit, as hot foods have a stronger smell.
