Introduction

These colorful vegetable patties with creamy mashed potatoes are a wonderful meal for families with children aged three and up. With a soft inside and a lightly crispy outside, they make exploring vegetables a truly enjoyable experience. At the same time, they provide valuable energy for active toddlers. Parents can easily fit this recipe into their daily routine and enjoy a relaxed meal together with their child.

Ingredients

For the patties:

  • 1 medium zucchini (approx. 200 g, organic preferred)
  • 2 medium carrots (approx. 150 g)
  • 80 g fine rolled oats
  • 1 egg
  • 50 g grated cheese (like a mild Gouda or cheddar)
  • 1 tbsp canola oil for frying
  • 1 pinch mild paprika
  • 1 pinch salt (use very sparingly)

For the mashed potatoes:

  • 500 g starchy potatoes
  • 100 ml whole milk
  • 1 tbsp butter
  • 1 pinch nutmeg

Preparation

  1. Peel the potatoes, cut them into small chunks, and boil them in a pot with a little water for about 20 minutes until soft.
  2. Meanwhile, finely grate the zucchini and carrots, then squeeze the grated vegetables firmly with your hands to remove excess water.
  3. Mix the grated vegetables in a bowl with the oats, egg, cheese, and spices until you have a mixture that is easy to shape.
  4. Form small patties from the mixture and heat the canola oil in a pan over medium heat.
  5. Fry the patties on both sides for about five to seven minutes each until they are golden brown and fully cooked.
  6. Drain the water from the soft potatoes, add the milk and butter, and mash everything with a potato masher into a creamy puree.
  7. Let the dish cool down well before serving, and always check the temperature before your child takes the first bite.

Variations and Tips

  • Different vegetables: You can easily swap the zucchini for grated parsnips or sweet potatoes.
  • Storage: The patties keep in the fridge for about two days and freeze exceptionally well.
  • Adjusting texture: For younger siblings, you can make the patties even smaller and thin the mashed potatoes with a little extra milk.
  • For the whole family: Adults can enhance their portion on the plate with fresh herbs, a little pepper, or a bold dip.
