Colorful Vegetable Polenta Slices for Little Hands

These vibrant polenta slices are a wonderful meal for toddlers over twelve months. They are easy to grasp, encourage independent eating, and offer a great way to include more vegetables in your daily routine. The soft texture on the inside and slightly firm crust make chewing very pleasant. Parents get a relaxed family meal that everyone can enjoy.

Ingredients

For about two to three portions, you will need the following ingredients:

  • 100 g polenta (cornmeal)
  • 400 ml low-sodium vegetable broth or water
  • 1 small carrot (approx. 50 g)
  • 1 small parsnip (approx. 50 g)
  • 1 tbsp olive oil (preferably organic)
  • 1 tsp finely chopped mild herbs (for example parsley or thyme)

Preparation

  1. Wash and peel the carrot and parsnip thoroughly.
  2. Grate the vegetables into very small pieces using a fine grater.
  3. Bring the vegetable broth or water to a boil in a medium-sized pot.
  4. Slowly whisk in the polenta to prevent any lumps from forming.
  5. Add the grated vegetables, olive oil, and herbs to the pot.
  6. Let the mixture simmer gently over very low heat for about ten minutes, until a smooth, thick consistency forms. Stir regularly.
  7. Spread the hot polenta onto a baking sheet lined with parchment paper or into a flat baking dish (about one to two centimeters thick).
  8. Let the mixture cool completely and set (this takes about thirty minutes).
  9. Cut the firm polenta into handy diamonds or strips.
  10. Always test the temperature of the slices before offering them to your child.

Variations and Tips

You can easily adapt the vegetables depending on the season. Zucchini or finely mashed peas make excellent alternatives to carrots and parsnips. For younger eaters, you can leave the slices slightly thicker and softer, while older children often prefer a crispy version lightly pan-fried in a little oil.

The slices will keep in an airtight container in the fridge for about two days. They also freeze beautifully. Simply place a piece of parchment paper between the individual slices so they do not stick together. For the adult family members, you can easily enhance the slices at the table with a little salt, pepper, and grated cheese.

Allergy and Safety Information

This recipe is naturally gluten-free and vegetarian. If you use store-bought vegetable broth, watch out for potential allergens like celery. Always introduce new ingredients one at a time and in small amounts to easily monitor for any reactions.

While honey is allowed after the first birthday, it is not needed in this savory dish. Nuts or seeds can be used as a topping for older family members, but whole nuts pose a choking hazard for toddlers and may only be offered finely ground.
