Colorful Vegetable Quiche for Little Helpers

Baking together brings great joy to many children and often sparks their curiosity about new vegetables. When children are allowed to help in the kitchen, they are often much more willing to taste the results later. This colorful vegetable quiche is perfect for little helpers, as they can press the dough with their own hands and arrange the toppings themselves. Along the way, the dish provides valuable energy for active days and playfully supports your child's fine motor skills.

Ingredients

For the crust (2 to 3 portions):

  • 150 g spelt flour
  • 75 g cold butter (cubed)
  • 1 pinch of salt
  • 3 tbsp cold water

For the filling:

  • 150 g broccoli
  • 100 g cherry tomatoes
  • 2 eggs (medium)
  • 100 ml heavy cream (or oat cream)
  • 50 g grated mild cheese (like Gouda)
  • 1 tsp mild herbs (like parsley or chives)

(Organic quality is recommended for eggs and dairy.)

Preparation

  1. Wash hands together with your child and set out all the ingredients. Preheat the oven to 180 degrees Celsius (350 degrees Fahrenheit).
  2. Quickly knead the flour, cold butter cubes, salt, and water in a large bowl until a smooth dough forms. Kneading is a wonderful sensory experience for little hands.
  3. Place the dough into a greased small tart pan (about 20 cm in diameter). Your child can now press the dough flat with their hands, pulling up a small edge around the sides.
  4. Cut the broccoli into very small florets and blanch in boiling water for about 3 minutes. Drain well and let it cool.
  5. Wash the cherry tomatoes and halve them lengthwise.
  6. In a separate bowl, whisk the eggs, cream, grated cheese, and herbs together with a whisk until well combined.
  7. Let your child arrange the cooled vegetables on the crust. Then, carefully pour the egg-cream mixture evenly over the top.
  8. Bake the quiche in the preheated oven for 25 to 30 minutes, until the filling is beautifully set and golden brown.
  9. Let it cool well before serving and always check the temperature, as the filling stays hot for a long time.

Variations & Tips

  • Swap the veggies: Zucchini cubes, grated carrots, or mild bell peppers work beautifully instead of broccoli. This allows you to use your child's favorite vegetables.
  • For cautious eaters: If your child is hesitant about vegetables, let them arrange the pieces into funny faces or patterns on the quiche. This removes pressure and brings fun to the dining table.
  • Storage: The quiche keeps well in the fridge for two to three days. It tastes great cold and is a fantastic addition to a lunchbox.
  • Freezing: You can easily freeze baked slices. When needed, simply reheat them in the oven, which provides a quick meal on busy days.
  • For the parents: Adults can spice up their portion on the plate with a little pepper, chili flakes, toasted seeds, or fresh arugula.
