
Colorful Veggie Sticks with Mild Carrot Hummus
Dipping makes eating interactive and fun for young children. It playfully encourages them to try new vegetables while supporting their fine motor skills. This mild carrot hummus is wonderfully creamy and invites little explorers to dig right in.
Ingredients
- 100 g chickpeas (canned or jarred, drained)
- 150 g carrots (organic recommended)
- 1 tbsp mild canola or olive oil
- 1 tsp sesame paste (tahini, optional, unsalted)
- 1 splash of lemon juice
- A small pinch of cumin
- For the sticks: 1/2 cucumber, 1 mild red bell pepper
Preparation
- Peel the carrots, cut them into small pieces, and steam them in a little water for about 10 minutes until soft.
- Rinse the chickpeas thoroughly in a sieve until the water no longer foams.
- Place the cooked carrots, chickpeas, oil, sesame paste, lemon juice, and cumin into a blender.
- Blend everything until a smooth, creamy consistency forms, adding 1 to 2 tablespoons of water if needed.
- Wash and deseed the cucumber and bell pepper, then cut them into handy, soft sticks.
- Let the hummus cool down completely and check the temperature before serving.
Variations & Tips
- Vary the vegetables: Baked pumpkin or sweet potato makes an excellent substitute for carrots in this dip.
- Storage: The hummus keeps well in an airtight container in the fridge for about 2 to 3 days. Freezing is possible, though the texture might become slightly crumbly after thawing.
- Adjusting texture: For younger siblings, you can lightly steam the veggie sticks to make them even softer and easier to chew.
- For the whole family: Parents can easily spice up their own portions at the table with a little salt, pepper, and a pinch of chili flakes.
