This mild soup warms you from the inside and feels especially comforting when your stomach is sensitive. Potatoes and carrots provide gentle energy, while the oats give it a wonderfully creamy texture. It is a wonderfully simple dish for cozy days during your pregnancy.
Ingredients for 2 to 3 Servings
- 400 g potatoes (floury or all-purpose)
- 300 g carrots
- 1 small onion
- 1 tbsp canola oil
- 700 ml vegetable broth
- 3 tbsp rolled oats
- A pinch of salt, pepper, and nutmeg
- Fresh parsley for garnish
Preparation
- Peel the potatoes, carrots, and onion, and cut them all into small cubes.
- Heat the canola oil in a pot and gently sauté the vegetables.
- Pour in the vegetable broth and let everything simmer gently for about 20 minutes.
- Stir in the oats and let the soup cook for another five minutes.
- Purée the soup until smooth or just mash it slightly, depending on your preference.
- Season with salt, pepper, and nutmeg, and garnish with fresh parsley.
Good to Know
This soup is great for meal prep and keeps well in the fridge for the next day. You can easily double the recipe and freeze individual portions for later.
When Things Feel Difficult
If you are dealing with severe nausea or heartburn, you can simply leave out the onion. Try sipping the smoothly puréed soup from a mug if you have little appetite for a full meal.
