Comforting Sweet Potato Puree with Tender Cod
This mild dish provides valuable nutrients while being very gentle on the stomach. The soft texture and delicate flavor are especially comforting when your appetite fluctuates during the early weeks of pregnancy. Cod is a wonderful and easily digestible source of protein.
Ingredients for 2 to 3 servings
- 500 g sweet potatoes
- 2 tablespoons olive oil or pasteurized butter
- A splash of pasteurized milk or oat drink
- 300 g cod fillet (boneless)
- 1 teaspoon lemon juice
- A pinch of salt and mild herbs (like dill)
Preparation
- Peel the sweet potatoes and cut them into small cubes.
- Boil the cubes in a pot of water until tender.
- Drizzle the cod with a little lemon juice and season lightly with salt.
- Cook the fish completely through in a nonstick pan over medium heat.
- Drain the water from the sweet potatoes.
- Mash the potatoes with milk and butter into a smooth puree.
- Serve the puree on a plate alongside the fully cooked cod.
Good to know
The puree can easily be made a day ahead and stored in the fridge. Just make sure to heat it until piping hot when you are ready to eat. This gives you a quick and nourishing meal on busy days.
When things are difficult
If you are feeling nauseous, you can skip the fish and just enjoy the mild puree in small portions. Sometimes the puree tastes even better cold if warm food smells are bothering you.
