Creamed Spinach with Scrambled Eggs and Boiled Potatoes

Family meals2+y 30 min 4 VeggieMedium
Contains: Dairy, Egg

Introduction

This classic dish is a favorite in many homes and is wonderfully suited for children aged three and older. It provides valuable energy for active days and combines soft textures that little eaters often appreciate. The gentle flavors invite everyone to enjoy a relaxed meal together at the family table.

Ingredients

  • 400 g frozen spinach (unsweetened, organic if possible)
  • 50 ml heavy cream or whole milk
  • 400 g potatoes (waxy or all-purpose)
  • 3 eggs (organic if possible)
  • 2 tbsp canola oil or mild butter
  • 1 pinch of ground nutmeg
  • 1 pinch of salt and mild pepper

Preparation

  1. Wash, peel, and cut the potatoes into bite-sized pieces. Boil them in a pot of lightly salted water for about 15 to 20 minutes until soft.
  2. Place the frozen spinach in a second pot and let it thaw slowly over medium heat. Once soft, stir in the cream and let everything simmer gently for about 5 minutes.
  3. Refine the spinach with a small pinch of nutmeg and stir well until a smooth, creamy consistency forms.
  4. Crack the eggs into a bowl and whisk them lightly with a fork. Heat the canola oil in a pan, add the egg mixture, and let it set over medium heat, stirring occasionally.
  5. Drain the cooked potatoes and serve them on flat plates alongside the creamed spinach and scrambled eggs. Allow the dish to cool down well and test the temperature before serving.

Variations and Tips

  • Veggie Swap: You can easily replace the spinach with finely pureed peas or mild zucchini if your child prefers those flavors.
  • Storage: Leftovers can be kept in the refrigerator for up to two days. Freezing previously cooked and reheated spinach is often not recommended for young children.
  • Adjusting Texture: For children who prefer softer textures, you can mash the potatoes directly into the creamy spinach.
  • Family Tip: Adults can season their portions at the table with a bit more salt, freshly ground black pepper, or roasted onions for a bolder taste.

Allergy and Safety Information

This recipe contains eggs and dairy. These belong to the common allergens. Always introduce new foods one at a time and in small amounts to easily observe any potential reactions.

Make sure the scrambled eggs are fully cooked for children, with no runny spots remaining. If you have any uncertainties about nutrition or potential allergies, it is best to consult your pediatrician.

Nutritional Information

This meal provides a wonderful combination of plant-based iron from the spinach and high-quality protein from the eggs. The vitamin C from the potatoes helps the body absorb the iron from the vegetables much better. Additionally, the carbohydrates in the potatoes provide long-lasting energy, which children can put to good use during this active developmental stage.
