
Creamy Asparagus and Potato Soup with Croutons
This mild cream soup is a wonderful way to introduce the asparagus season to children. The potatoes make the dish beautifully thick and filling. The crispy croutons provide an exciting texture contrast that many children love.
Ingredients
- 250 g white or green asparagus (organic if possible)
- 200 g potatoes (floury or all-purpose)
- 1 small mild onion
- 1 tbsp canola oil or mild butter
- 400 ml vegetable broth (low sodium)
- 50 ml heavy cream or a plant-based alternative
- 1 slice whole-wheat bread (for the croutons)
- 1 tsp olive oil
- A pinch of freshly grated nutmeg
- A little fresh parsley
Preparation
- Thoroughly peel the asparagus, cut off the woody ends, and chop the stalks into small pieces. Peel the potatoes and the onion, then cut them into fine cubes.
- Warm the canola oil in a pot and sauté the diced onion until translucent. Add the potatoes and asparagus pieces and fry briefly.
- Pour the broth over the vegetables and let everything simmer gently for about 15 to 20 minutes. The vegetables are ready when they are completely soft.
- Meanwhile, cut the whole-wheat bread into small cubes. Heat the olive oil in a pan and toast the bread cubes until golden brown.
- Remove the soup from the heat, stir in the cream, and blend everything with an immersion blender until smooth and creamy. Season with a small pinch of nutmeg.
- Let the soup cool down well and always check the temperature before serving. Garnish with the crispy croutons and a little finely chopped parsley.
