Ingredients

  • 150 g white asparagus (organic preferred)
  • 100 g risotto rice (such as Arborio)
  • 1 small onion
  • 1 tbsp rapeseed oil or olive oil
  • 400 ml mild vegetable broth (low sodium)
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp butter
  • A little fresh parsley, finely chopped

Preparation

  1. Thoroughly peel the white asparagus, remove the woody ends, and cut the spears into small, bite-sized pieces.
  2. Peel the onion and chop it very finely.
  3. Heat the oil in a pot over medium heat and gently sauté the diced onion until translucent.
  4. Add the risotto rice and stir briefly until the grains look slightly transparent.
  5. Stir in the asparagus pieces and pour in about one-third of the vegetable broth.
  6. Let it simmer gently over low to medium heat, gradually adding more broth as the liquid is absorbed.
  7. After about 20 minutes, the rice will be soft and the texture nicely creamy.
  8. Remove the pot from the heat, stir in the Parmesan and butter until smooth, and garnish with parsley.
  9. Allow the risotto to cool down well and test the temperature before your child takes the first bite.

Variations & Tips

  • Swap the vegetables: When asparagus season is over, this risotto tastes wonderful with small zucchini cubes or grated carrots.
  • Storage: Leftovers can be kept in an airtight container in the fridge for up to two days. Freezing is possible, though the texture of the rice may change slightly.
