Creamy Autumn Pumpkin Mac and Cheese

This creamy pasta dish brings the cozy flavors of autumn to the table, combining beloved macaroni with an extra serving of vegetables. The soft noodles are easy for young children to chew and scoop up independently. At the same time, the hidden pumpkin provides valuable vitamins for the cooler months.

Ingredients

For 2 to 3 portions, you will need:

  • 150 g macaroni (or other small pasta shapes)
  • 200 g Hokkaido pumpkin (organic, skin can be left on)
  • 100 ml milk (whole milk or plant-based alternative)
  • 50 g grated mild cheese (such as Gouda or mild cheddar)
  • 1 tsp butter or mild canola oil
  • A tiny pinch of salt and some mild paprika

Preparation

  1. Wash the pumpkin, remove the seeds, and cut it into small cubes.
  2. Steam the pumpkin cubes in a pot with a little water for about 10 to 15 minutes until very soft.
  3. Meanwhile, cook the pasta in a separate pot according to the package instructions until tender.
  4. Drain the water from the pumpkin. Add the milk and butter, then blend everything with an immersion blender until a smooth, creamy sauce forms.
  5. Stir the grated cheese into the warm pumpkin mixture until completely melted. Season with a tiny pinch of salt and paprika.
  6. Fold the cooked pasta into the warm sauce.
  7. Allow the dish to cool down well before serving, and always test the temperature before your child takes the first bite.

Variations & Tips

  • Swap the veggies: Sweet potato or carrots also work wonderfully for creating this creamy sauce.
  • For the whole family: Adults can easily spice up their own portions at the table with black pepper, freshly grated nutmeg, or a pinch of chili flakes.
  • Storage: Leftovers keep well in an airtight container in the fridge for about two days. The sauce can also be frozen without the pasta and thawed in individual portions.
  • Adjusting texture: For children who prefer an extra creamy consistency, simply stir in a small splash of milk or saved pasta water.
