Ingredients

  • 100 g precooked beetroot (vacuum-packed or freshly boiled)
  • 200 g chickpeas (canned or jarred, rinsed well)
  • 1 tbsp smooth almond butter (or mild tahini)
  • 1 tbsp olive oil
  • 1 tsp lemon juice
  • A pinch of cumin
  • 1 small cucumber

Preparation

  1. Place the chickpeas, beetroot, almond butter, olive oil, and lemon juice into a blender or a tall container.
  2. Blend everything using an immersion blender or food processor until a smooth, creamy consistency forms.
  3. Season the hummus with a tiny pinch of cumin.
  4. Peel the cucumber and cut it into manageable, finger-thick sticks.
  5. If you used freshly cooked beetroot, check the temperature before serving to ensure it is comfortably warm or room temperature.

Variations & Tips

  • Swap the veggies: Instead of cucumber sticks, softly steamed carrots or zucchini are excellent for dipping.
  • For the parents: Set aside a portion for yourself and season it with a little salt, pepper, and fresh garlic.
  • Storage: The hummus keeps well in an airtight container in the fridge for about two to three days.
  • Freezing: You can easily freeze the hummus. Ice cube trays work best for creating convenient, small portion sizes.
