Creamy Hokkaido Pumpkin Soup with Roasted Seeds

Introduction

This velvety pumpkin soup is an absolute autumn classic for the family kitchen. Thanks to its mild flavors and creamy texture, it is very popular with many children aged three and up. Valuable nutrients support development during this active phase of life. Parents can easily prepare the dish in advance and enjoy it together with the whole family.

Ingredients

  • 600 g Hokkaido pumpkin (organic quality preferred)
  • 200 g potatoes
  • 1 medium carrot
  • 1 small onion
  • 1 tablespoon canola oil
  • 700 ml mild vegetable broth
  • 100 ml heavy cream
  • 1 teaspoon mild curry powder
  • 2 tablespoons pumpkin seeds

Preparation

  1. Wash the vegetables thoroughly. Remove the seeds from the Hokkaido pumpkin and cut it into small cubes along with the peeled potatoes, carrot, and onion.
  2. Heat the canola oil in a large pot. Sauté the diced onion until translucent, then briefly fry the remaining vegetables.
  3. Sprinkle the curry powder over the top and deglaze everything with the vegetable broth. Let the soup simmer over medium heat for about 20 minutes.
  4. Meanwhile, lightly toast the pumpkin seeds in a dry pan without fat. Remove the pan from the heat as soon as the seeds become fragrant.
  5. Once the vegetables are soft, purée the soup with an immersion blender until a smooth, velvety consistency is reached. Finally, stir in the heavy cream.
  6. Pour the soup into bowls and let it cool well before serving. Always test the temperature yourself before your child takes the first spoonful.

Variations and Tips

For a slightly sweet note, you can replace the potatoes with a sweet potato. Covered, the soup will keep in the refrigerator for about two days. It also freezes exceptionally well in individual portions. For younger siblings, you can simply omit the roasted seeds or stir in a teaspoon of fine pumpkin seed butter instead. Adults often enjoy refining their portion at the table with a few chili flakes or fresh ginger.

Allergy and Safety Notes

This recipe contains heavy cream and therefore dairy products. Always introduce new ingredients individually and in small amounts to carefully observe any potential reactions. Whole seeds carry a certain choking risk for young children. Make sure your child chews the roasted pumpkin seeds well, or chop them very finely if in doubt. If you have any concerns about your childs diet, please talk to your pediatrician.
