Creamy Millet Risotto with Mushrooms and Zucchini
Millet is a wonderful source of plant-based iron, which is incredibly beneficial during pregnancy. This creamy dish is comforting and provides valuable nutrients for your daily routine. A splash of lemon juice not only adds a fresh flavor, but also helps your body absorb the iron more easily.
Ingredients (for 2 to 3 servings)
- 200 g millet
- 1 mild onion
- 1 clove of garlic
- 250 g mushrooms
- 1 medium zucchini
- 600 ml hot vegetable broth
- 2 tbsp olive oil
- 3 tbsp cream cheese (made from pasteurized milk)
- A splash of fresh lemon juice
- Salt, pepper, and fresh parsley
Preparation
- Rinse the millet thoroughly in a fine mesh sieve under hot water until the water runs clear.
- Finely dice the onion and garlic, slice the mushrooms, and chop the zucchini into bite-sized pieces.
- Heat the olive oil in a large pot and gently sauté the onion and garlic until translucent.
- Add the millet and the prepared vegetables to the pot and cook briefly.
- Pour in the hot vegetable broth and let everything simmer gently over low heat for about 20 minutes.
- Once the liquid is mostly absorbed, stir in the cream cheese and season with salt, pepper, and lemon juice.
Good to know
Millet often thickens up a bit as it cools down. If you are reheating a portion the next day, simply stir in a splash of water or extra broth. This will make the dish wonderfully creamy again.
If things are feeling difficult right now
Heartburn often becomes noticeable towards the end of pregnancy. If you are experiencing this, you can simply leave out the onion and garlic. It also helps to eat several small portions throughout the day, as this puts less strain on your stomach.
