Creamy Mushroom Risotto with Fresh Chanterelles for Toddlers

Introduction

When the mushroom season begins in early autumn, this creamy risotto makes a wonderful family meal. The soft texture of the short-grain rice and the mild parmesan make it especially appealing to many children. At the same time, this dish provides valuable energy for active days and gently introduces your child to the variety of seasonal ingredients.

Ingredients

For 2 to 3 portions, you will need the following ingredients:

  • 150 g risotto rice (such as Arborio, organic if possible)
  • 150 g fresh chanterelle mushrooms
  • 1 small onion
  • 1 tbsp olive oil or butter
  • 500 ml mild vegetable broth (low sodium)
  • 30 g freshly grated parmesan cheese
  • 1 tbsp finely chopped parsley
  • A tiny pinch of black pepper

Preparation

  1. Clean the chanterelles thoroughly with a soft brush or cloth and cut them into bite-sized pieces.
  2. Peel the onion and dice it very finely.
  3. Heat the olive oil in a pot over medium heat and sauté the diced onion until translucent.
  4. Add the risotto rice and cook briefly until the grains look slightly translucent at the edges.
  5. Stir in the chanterelles and deglaze the pan with one third of the vegetable broth.
  6. Let the risotto simmer gently over medium heat, stirring regularly.
  7. Gradually pour in the remaining broth whenever the liquid is almost absorbed.
  8. After about 20 minutes, the rice will be tender but still have a slight bite, creating a creamy texture.
  9. Remove the pot from the heat, then stir in the parmesan and parsley.
  10. Let the risotto cool down well before serving and check the temperature so your child does not burn their mouth.

Variations & Tips

  • Vegetable swap: If your child is not a fan of mushrooms yet, you can easily substitute them with small zucchini cubes or peas.
  • Storage: Leftovers can be stored in an airtight container in the fridge for up to two days. Freezing is not highly recommended, as the rice can become mushy when thawed.
  • Family tip: Parents can season their own portions at the table with a little extra salt, freshly ground black pepper, or chili flakes.
  • Texture adjustment: For children who are still learning to like chunky textures, you can chop the mushrooms very finely before cooking.
