Creamy Mushroom Risotto with Sweet Chestnuts

This autumnal comfort food combines mild cultivated mushrooms with pre-cooked, soft chestnuts. The slightly sweet note of the chestnuts is often a big hit with many children. At the same time, this dish provides valuable energy for active explorers aged three and older. The creamy consistency makes it an ideal family meal for chilly days.

Ingredients

  • 150 g risotto rice (such as Arborio)
  • 100 g mild cultivated mushrooms (organic preferred)
  • 80 g pre-cooked chestnuts
  • 1 small onion
  • 1 tbsp olive oil
  • 500 ml mild, low-sodium vegetable broth
  • 30 g Parmesan cheese (freshly grated)
  • 1 tbsp butter
  • 1 pinch of mild pepper or some fresh parsley

Preparation

  1. Peel the onion and dice it very finely. Clean the mushrooms and cut them into small, bite-sized slices.
  2. Roughly chop the pre-cooked chestnuts using your fingers or a knife.
  3. Heat the olive oil in a pot over medium heat and sauté the diced onion until translucent. Add the risotto rice and toast briefly until the grains are slightly translucent.
  4. Add the mushrooms and chestnuts, sautéing them briefly with the rice.
  5. Deglaze with a little vegetable broth until the rice is just covered. Let it simmer gently, stirring occasionally.
  6. Keep adding a little broth whenever the liquid is almost absorbed. This takes about 20 minutes in total, until the rice is soft but still has a slight bite.
  7. Remove the pot from the heat. Stir in the Parmesan and butter until a smooth, creamy texture forms.
  8. Allow the risotto to cool to lukewarm and always check the temperature before serving your child.

Variations and Tips

  • Swap the vegetables: Instead of mushrooms, small pumpkin cubes or grated carrots work wonderfully in this dish.
  • For the whole family: Parents can season their portions at the table with a bit more salt, pepper, and fresh herbs for a stronger flavor.
  • Storage: Leftovers can be kept covered in the fridge for up to two days. When reheating, simply add a splash of water or milk to make it creamy again.
  • Freezing: Risotto freezes well. However, the texture might be slightly softer after thawing. It is best to freeze it in small, portion-sized containers.
