This creamy parsnip and carrot soup brings comforting warmth to the family table on chilly days. Seasonal root vegetables naturally carry a gentle sweetness that appeals to many children. Ingredients

  • 250 g parsnips
  • 250 g carrots
  • 1 small, sweet apple (such as Gala or Fuji)
  • 1 small onion
  • 1 tablespoon canola oil (or rapeseed oil)
  • 600 ml mild vegetable broth (low sodium)
  • 50 ml heavy cream or oat cream
  • A pinch of mild herbs like parsley

Preparation

  1. Prepare the vegetables: Peel the parsnips, carrots, onion, and apple. Cut everything into small cubes.
  2. Heat the oil in a pot. Sauté the diced onions until they are translucent.
  3. Add the parsnips, carrots, and apple, cooking them briefly. Pour in the vegetable broth.
  4. Bring the soup to a boil and let it simmer over medium heat for about 15 to 20 minutes. The vegetables are ready when easily pierced with a fork.
  5. Remove the pot from the stove and stir in the cream. Blend everything with an immersion blender until a smooth, creamy texture forms.
  6. Let the soup cool down. Always check the temperature before serving to avoid burns.

Variations and Tips

Parsnips can easily be swapped for sweet potatoes. This gives the soup a slightly different but equally child-friendly flavor. For older children or adults, you can scatter toasted bread cubes on top for a crunchy addition.

The soup stays fresh in the fridge for about two days when covered. It also freezes beautifully. Simply divide the cooled soup into suitable containers and freeze it for up to three months.

Allergy and Safety Information

If you use standard vegetable broth, keep an eye out for celery, as it is a common allergen. When using dairy cream, be mindful of milk proteins. Always introduce new ingredients one at a time and in small amounts to easily spot any reactions.
